I’m just loving all these healthy sweet treats for the family. I honestly think that that if we learn make yummy things like this, we are dong our kids a huge favour or at the very least limiting the sugar we allow in their diets. Which lets be honest is tough!!! With recipes as yummy as this we really have no excuse!

Raw Chocolate Ganache and Coconut Ice Slice
BASE:
2 cups desiccated GMO free Coconut
1/4 cup melted or soft Coconut oil
1 tbs Maple Syrup (can sub honey)
CHOCOLATE GANACHE:
9 pitted and diced Medjool dates
1/2 cup Raw Cacao powder
1/2 Tbs Maple Syrup
1/4 cup melted or soft Coconut oil
Pinch of Himalayan rock salt
1/2 Tbs Hemp powder
1 tsp Vanilla extract ( Alcohol free ) or Vanilla Powder
1/2 cup filtered water
TOPPINGS:
2 Tbs Dried Goji berries
1 Tbs Coconut Shavings
METHOD:
1) Blend Coconut, Coconut oil and Maple Syrup in a high speed Blender/Food Processor until it is fine or ideally starts to make a paste. You will need to stop the blender and pull the ingredients away from the glass a couple of times.**If you are using a Nutribullet- I used a short cup together with the mulling blade to mull the coconut first. It went above the max line but this didn’t make any difference. I then transferred it to a large cup with extractor blade, and added the cool oil and maple syrup)**
2) Press mixture into a non stick loaf tin and put in the fridge
3) For the Ganache, blend all ingredients together until smooth. (You can use a food processor too instead for this and the base)
4) Spoon mixture onto of your coconut ice
5) Sprinkle your Goji berries and coconut shavings on top and lightly press the topping into the Ganache to stick.
6) Leave to set for minimum 2 hours
7) Take out the fridge, with a hot knife slice into thin slices, remove and dive into it!

Shannon shame darling, sorry you had a horrible experience. I read your post and I think the mistake you made was using coconut oil as a conditioner. It’s definitely not to be used as such. If you have dry, damaged hair it’s advised to use it as a mask. I run it through my hair and scalp ( I have very dry scalp) two hours before washing as usual you have to rinse it all out with a gentle/ moisturizing shampoo. Shame it’s no wonder it looked like rats tails! Try this method next time. I swear by it!! 🙂
