This is a quick-and-easy-to-make treat for the kids this summer. Another great idea is to add frozen raspberries when layering the pops! Get the children involved with the layering of the ingredients, enjoy!
Chocolate Peanut Butter Ice Cream Pops
Serves: 8 portions
Preparation time: 5-8 hours (although it shouldn’t take longer than 20 minutes to prepare!)
Ingredients:
1 cup roasted unsalted peanuts, chopped
¾ cups creamy peanut butter
100g melted dark chocolate
1 litre store-bought vanilla ice cream
3 Black Cat chocolate bars, cut into pieces
8 bamboo or paper cups (to set the pops in)
8 wooden ice cream sticks (found at most packaging shops)
Method – to assemble:
Spoon about a teaspoon of chopped peanuts in the bottom of the cup.
Add a small scoop of shop-bought vanilla ice cream on top.
Drizzle a tablespoon of melted dark chocolate over this.
Add another teaspoon of chopped peanuts.
Scoop another small scoop of vanilla ice cream on top.
Add a tablespoon of peanut butter and spread until even and layer with some chopped peanut butter bar.
Fill the cup with ice cream until filled and push a ice cream stick into the cup (right to the bottom).
Set in the freezer until frozen hard (5-8 hours).
Just before serving, remove from the freezer to soften slightly. Twist out of the cup or tear off the paper cup from the ice cream pop and serve!
